  • 1 teaspoon vanilla extract
  • 60 ml milk
  • 40 g cake flour
  • 20 g cornstarch
  • 1/2 teaspoon baking powder
  • 1 pinch salt

Method
 

Preparation
  1. Preheat your oven to 160°C (320°F). Prepare your cake pan by lining the bottom with parchment paper.
  2. In a mixing bowl, separate the egg whites and yolks. Beat the egg whites with a pinch of salt until soft peaks form.
  3. Gradually add granulated sugar to the egg whites, continuing to beat until stiff peaks form.
  4. In another bowl, whisk together the egg yolks, milk, and vanilla extract until well combined.
  5. Sift together the cake flour, cornstarch, and baking powder. Gradually add this mixture to the egg yolk mixture, stirring gently.
  6. Carefully fold in one-third of the beaten egg whites into the yolk mixture to lighten it. Then, fold in the remaining egg whites until just combined.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake in the preheated oven for 30-35 minutes or until the cake is golden and a toothpick inserted in the center comes out clean.
  9. Remove the cake from the oven and let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Notes

Serve dusted with powdered sugar or accompanied by fresh whipped cream or fruit coulis. For added flavor, consider pairing with matcha sauce or chocolate ganache.
